Apple Pie

Ingredients

2 lb 6oz - Northern Spy apples (about 6 to 8 apples) - do not use Red Delicious
2/3 cup - Brown Sugar
1 tbsp - Cinnamon ( I tend to use 3/4 of a Tbsp)
1/3 cup - Cornstarch
2 tbsp - Honey
Pinch of salt
Lemon water

Pie Dough - recipe to follow

1. Peel and core apples. Slice 1/4 inch thick.
2. DIP apples in lemon water so they don't brown. Do not let them stand in water.
3. Mix apples with sugar, cornstarch, cinnamon, honey, and salt.
4. Let stand for 15 mins.
5. Drain extra juice from apple mixture and keep to one side.
6. Roll out pie down and line a large pie plate. Wash bottom of pie dough with egg wash.
7. Heat juices from apple mixture in a small pot until thick and add to apples.
8. Place apples in pie plate.
9. Cover pie with another sheet of dough and cut a small slit on the top to make a vent. Brush with egg wash.
10. Cook in a convection over at 325 degrees fro 45mins to an hour.
11. Let pie stand for 20mins before you serve.
