Ingredients
2 lb 6oz - Northern Spy apples (about 6 to 8 apples) - do not use Red Delicious
2/3 cup - Brown Sugar
1 tbsp - Cinnamon ( I tend to use 3/4 of a Tbsp)
1/3 cup - Cornstarch
2 tbsp - Honey
Pinch of salt
Lemon water
Pie Dough - recipe to follow
1. Peel and core apples. Slice 1/4 inch thick.
2. DIP apples in lemon water so they don't brown. Do not let them stand in water.
3. Mix apples with sugar, cornstarch, cinnamon, honey, and salt.
4. Let stand for 15 mins.
5. Drain extra juice from apple mixture and keep to one side.
6. Roll out pie down and line a large pie plate. Wash bottom of pie dough with egg wash.
7. Heat juices from apple mixture in a small pot until thick and add to apples.
8. Place apples in pie plate.
9. Cover pie with another sheet of dough and cut a small slit on the top to make a vent. Brush with egg wash.
10. Cook in a convection over at 325 degrees fro 45mins to an hour.
11. Let pie stand for 20mins before you serve.

My Infamous Chili
Once upon a time there was a boy named Dave. Upon the arrival of his birthday.. his WONDERFUL girlfriend asked him what dish he wanted her to cook for him. He said, "Chili".
Having never made chili before, the wonderful girlfriend winged it... and the outcome? THE BEST CHILI EVER!
So here we go..
Ingredients
Ground beef
Onions
Carrots
Celery
Green, Red, Yellow, Orange Bell Peppers
Kidney Beans
Plum Tomatoes in a can
Old El Paso sachets of Taco and Chili seasoning
Cayenne Pepper
Chili Powder
Cumin
Garlic
Chicken Bouillon Cube
Paprika
Salt
Pepper
Olive Oil
Butter
I didn't put quantities because it all depends on how much you want to make.
For one large tray of ground beef, I would:
1. In a LARGE pot sweat 3 cloves of garlic, 5 large onions, 5 carrots, 5 stalks of celery, 2 red/green/yellow/and orange peppers (all chopped into 1/2 inch pieces) in a bit of oil and butter for about 5 to 10 minutes.
2. Add the two sachets of Old El Paso seasoning, a teaspoon of cayenne, a tablespoon of chili powder, two tablespoons on paprika, a teaspoon of cumin, and the bouillon cube.
3. While that is cooking away.. brown your beef. In a large (very hot) skillet, break up your ground beef and season it with salt and pepper. Let it brown and crust up a bit before you stir it. Don't cook it thoroughly... only until it is seared and brown. Stir into to your veggies. You may have to brown your beef in small batches.
4. Add the canned plum tomatoes.. crushing them with your hand (or you can chop them up a bit with a knife) as you add them in. Add all the liquid too and make sure the chili is almost completely covered. Stir everything thoroughly.
5. Cover with a lid and let it cook for 45 mins. At the half hour mark you can taste the chili and adjust the seasoning.
6. After 45 mins, strain and wash the kidney beans and add those to the pot. Stir thoroughly and cook for 15mins.
If you're added too much spice.. you can always add a few peeled potatoes and that should absorb some of the spice. Make sure to remove the potatoes before you serve the chili.
And voila!
Easy-peasy homemade chili!
I usually serve it with sour cream, cheddar cheese, and homemade guacamole.

Milanesa
We're going to start with the best of the best!
What can I say about this quintessential Argentine dish? It's perfect. It tastes fantastic. And every Argentine loves it.
Milanesa is Argentina's version of schnitzel aka breaded veal... except that it tastes MUCH better!
Try it out!
You will need:
(Serves 4)
8 Veal scallopini - at least 2 per person.
3 Large Eggs
4 Large cloves of garlic
3 tablespoons of parsley
1/4 cup of milk
Bread crumbs
Salt & Pepper
Veg. Oil
1. In a large bowl, beat the eggs and add the milk.
2. Finely mince the garlic and parsley and add to the egg and milk mixture.
3. Salt and pepper the veal.. making sure to season them enough! Don't skimp! Add them to the egg and milk mixture. Let that rest for about half an hour in the fridge.
4. In a large deep dish, spread out your bread crumbs. Place veal on breadcrumbs and bread each side of the veal thoroughly (press breadcrumbs into the veal on BOTH sides). Set aside on a plate.
5. When all your veal is breaded, fill a frying pan with about 1/2 inch of veggie oil and heat it up.
6. Take a small piece of veal and test the oil.. make sure it fries instantly.
7. Keep the heat at medium. It should take no longer than a minute or two to cook each side.
8. Place on a plate with paper towel.
9. Serve!
You can serve Milanesa with french fries, mash potatoes, a nice tomato salad, or just about anything.

A stack of waffle - two feet high! - with boysenberry jam!
I'll follow with a dozen eggs.. I'll scramble them... I guess,
Six or seven turkey legs.. I could not do with less!
Some rhino roast, and hippo stew, and fresh fillet of horse,
Then wait a minute... maybe two...
And start the second course!
